Vegetable Uttapam (Semolina Pancake)

Everyone likes Uttapam. Today I'll give recipe of quick Uttapam. My son likes Uttapam very much but every time I can’t make Uttapam made with Dal and Rice since it takes time for fermentation. So I make instant Veggi Uttapum. It's very easy, healthy and yummy.
Ingredients:
Semolina - 2 bowls
Chopped Vegetable - 1 bowl (carrot, bell pepper, cabbage, onion, tomato and any other vegetable you like)
Yogurt (Curd) - 2 bowls
Lime Juice - 1 tsp
Cilantro to garnish
Salt to taste
Little bit of Red Chili Powder
Eno for fermentation
Little bit of water if needed
Oil for cooking
Chopped Vegetable - 1 bowl (carrot, bell pepper, cabbage, onion, tomato and any other vegetable you like)
Yogurt (Curd) - 2 bowls
Lime Juice - 1 tsp
Cilantro to garnish
Salt to taste
Little bit of Red Chili Powder
Eno for fermentation
Little bit of water if needed
Oil for cooking
Method:
1. Mix semolina and yogurt in a bowl and make batter. Add water if required.
2. Add all chopped Vegetables
3. Add Lime juice, little bit of salt and red chili powder
4. For garnishing add cilantro
5. Use a different bowl for fermentation and take small quantity of batter and add ¼ tsp of Eno powder and mix it.
6. Heat little bit of oil in a non-stick frying pan. Now pour batter mixed with Eno and spread it in circular motion on pan to make a thin Uttapam.
7. Cook on one side, turn over and cook on other side using little bit of oil.
8. Make more such Uttapam using the same method from remaining batter.
9. Serve hot with coconut chutney.

Note:
1. If you don’t want to use Eno then put batter aside for
fermentation for 40 - 60 minutes.
2. You can use either coarse or fine semolina and you can put green chili to make it spicier.
