Baked Lemon Pepper Salmon (with Liquid Smoke)

 

Hello readers,
Happy Friday!! Today I would like to share my easy and healthy recipe for a Friday night dinner.

Healthy Cooking

Salmon is really healthy for your diet. It strengthens your heart and your muscles. It contains omega-3 fatty acids which is a good fat. It helps to lower your bad cholesterol and raises your good cholesterol. It is also high in Vitamin D. Four ounces gives you a full day supply of Vitamin D. It provides over half the daily requirement of niacin, B12, and selenium. Four ounces of salmon provides a person with approximately 30 grams of protein. The protein that is in salmon is easy to digest and easy for the body to absorb.


Original recipe makes 4 servings

Ingredients:- 
4 fillets Salmon (4 ounce each)
3 fresh lemons
2 tbsp. Lemon Pepper seasoning I prefer McCormick
2 tsp. Soy sauce
1 tsp. Liquid Smoke
1/2 tsp. Salt
-Preheat oven to 400°.           
-Cover a baking pan with aluminum foil. Spray with non-stick cooking spray. Place salmon into pan, scales down.
- Cut two of the lemons into round slices, and cut the other lemon in half. Squeeze juice from halved lemon onto salmon.
-Sprinkle "McCormick Lemon Pepper" seasoning on salmon until evenly covered, then put soy sauce, liquid smoke and salt on all the fillets.
-Arrange lemon rounds in a row down length of salmon.
-Place on the top rack in oven and bake for 20-30 minutes or until fish flakes easily with a fork.

I like to serve this salmon dish with baked carrots and mashed potatoes. I baked carrots with a sprinkle of lemon pepper seasoning and teaspoon of olive oil. For the mashed potatoes I used the boxed Betty Crocker Roasted Garlic Mashed Potatoes.
You can also serve this dish with your favorite salad and baked vegetables of your choice.






Lemon Butter sauce for Fish
½ stick of Butter
1tsp Lemon pepper seasoning
½ tsp. black pepper
Heat the butter in a small saucepan over medium heat. Stir in Lemon Pepper seasoning and cook for 5 minutes. Sauce is ready to serve.



This whole dish goes very well with Cupcake Pinot Noir for a cozy Friday Night dinner.

The taste includes a flavor profile of mild raspberry, plum and dark chocolate with a finish that is dry and very light on tannins.
